Now, banana juice
P. Sunderarajan
NEW DELHI:
A new kind of wine may soon be in the Indian market made from banana!
Scientists at the Bhabha Atomic Research Centre (BARC) have developed the technology to extract the juice from banana. Making wine is only just one step away fermentation. The juice could itself be used as nectar after dilution or be used as a soft drink by carbonating it.
According to scientists, as much as 60 per cent of the total soluble material in a banana can be extracted. The left-over pulp can also be used. It retains the aroma of banana. Dried into a fine powder, it can be used as an additive in confectioneries, milk shakes and baby food or be used to make biscuits and cakes.
