Now, banana juice

NEW DELHI: A new kind of wine may soon be in the Indian market — made from banana!

Scientists at the Bhabha Atomic Research Centre (BARC) have developed the technology to extract the juice from banana. Making wine is only just one step away — fermentation. The juice could itself be used as nectar after dilution or be used as a soft drink by carbonating it.

According to scientists, as much as 60 per cent of the total soluble material in a banana can be extracted. The left-over pulp can also be used. It retains the aroma of banana. Dried into a fine powder, it can be used as an additive in confectioneries, milk shakes and baby food or be used to make biscuits and cakes.
