Catering college aims at new record

CHENNAI: SRM Institute of Hotel Management has announced that a research and development department to experiment and create new recipes with high nutritive value and reflect Southern ethnic cuisine, would be set up soon.

The institute is aiming to set a record in January 2006. The plans are to enable 500 students cook 1001 recipes in three hours, the principal, Antony Ashok Kumar said. The recipes would be unique and a panel of chefs from hotels would attest to the quality of the food prepared. The details will be announced in December.

From research in healthy cuisine conducted at the college, such dishes as diet biriyani and soup that did not require maida or butter for thickening has been concocted, he said.

The college won an `Outstanding Contributions' award at the 2nd National Culinary Conference organised by the Indian Federation of Culinary Associations. The principal, Mr. Ashok Kumar, was awarded a three-day complimentary stay in Bangkok.

The Vice-Chancellor, Sathyanarayana, said SRM Institute of Hotel Management was the only catering institute to have its own hotel on the same campus. This provided a good training ground for the students, he said, announcing plans to open another hotel in the city soon.

The SRM Institute of Hotel Management offers a bachelor's degree in hotel and catering management and diplomas in hotel management and catering technology.

A.Jeyachandran from the Taj group spoke of the changing attitudes that enabled students to see hotel management as more than just kitchen work.
