CHENNAI: The boutique hotel Rain Tree recently had its cake-mixing function, believed to be a harbinger of good tidings and happiness. A community event, the ceremony heralds the Christmas season.

The chef marinates dry fruits in liquor, which will later go into the Christmas cake. The longer the fruit is soaked the tastier and richer the cake.

All the hotel staff participated in the event. Raisins, glazed cherries, orange peel, dates and dried apricots go into the mix with a liberal dousing of dark rum and brandy.
