Japanese cuisine at home

Lovers of Japanese cuisine are in for a sumptuous treat. On the occasion of its fifth anniversary, The Metropolitan Hotel Nikko, the country's first Japanese fine-dining restaurant, will this Friday release a book, "Sakura's Japanese Kitchen: The Culture and Cuisine of Japan", unravelling the evolution of Japanese cuisine.

The book gives complete details about how a wide assortment of mouth-watering dishes can be prepared at home and breaks the myth that Japanese food is all about sushi and sashimi.

The book gives historical insights into factors that have contributed to making Japanese cuisine unique.

To help readers understand Japanese ingredients and cooking techniques, a glossary in simple English has been included in the book.

Food columnist Sourish Bhattacharyya spent a year researching and writing the book with a team of Japanese chefs led by Nariyoshi Nakamura, executive chef of The Metropolitan Hotel Nikko.

The book also has a chapter devoted to a nouvelle cuisine prepared by master chef Nakamura himself together with a list of dishes for vegetarians. The book will be available at The Metropolitan Hotel Nikko for Rs. 500. — Madhur Tankha.
