Food for the occasion

BANGALORE: Independence Day usually churns out the same events. People flaunt their patriotism with miniature versions of the flags on their cars or scooters. However, the Bangalore Hoteliers Association dished out a salad in neat rows of grated carrots, radish and capsicum, topped by a rose-shaped beetroot.

The main course consisted of shavige, but what made the day was the plantain leaf; saffron, white and green chutneys placed one below the other and a sweet dish that resembled the flag.
