VIJAYAWADA: A ‘Kebab and Curries’ food festival that began at Fortune Murali Park on Thursday promises to serve a good number of varieties of kebabs, including some vegetarian ones, till October 25. What makes the festival interesting is its effort to ensure maximum variety. Kebabs, ranging from Kakori to Dahi ka kebab, and curries like Paneer Ka Soola on display greet the gastronomes. Of all the varieties of kebab, the most famous is the legendary Kakori kebab, a mouth-watering delight that originated in a hamlet of the same name near Lucknow. According to a local legend, it was created for a toothless prince. “The Kakori is so soft that it melts in your tongue,” said Rajkumar Singh, Food and Beverages Manager of the hotel. For vegetarians, there is Kasturi tikka, a must-have in every kebab festival. Food lovers can try Bharwan Aloo, another vegetable kebab too. Haryali tikka and Subz Sheek are some other vegetarian kebabs that will surely tempt the visitors, Mr. Singh said. “A whole lamb will be roasted in front of the guests during the festival. The guests will have choice to choose which part of the roasted lamb they want. The chefs will carve out that portion and serve,” he explained. OptionsOther kebab options include Reshmi kebab, Tangri kebab, Lugdi kebab, Shami kebab, Mahi Ajwaini Tikka, Murgh purluft, Seekh kebab, Murgh Malai kebab and Paneer Lajawab. A variety of curries, including the typical Andhra ones like Nellore Chepala Pulusu and Naatu Kodi kura, besides Rarha Gosht, Mutton Rogan Josh, Murgh Sailana, Safed Maas, Goshtaba, Nihari and Kadhai Paneer, will be served. If one insists on rounding off the meal with something more substantial, organisers offer a choice of Biryanis. “The festival is being organised in a North West frontier ambience. Haleem offerAs Id is fast approaching, we are offering Haleem, Sheer Korma and some other varieties,” said hotel general manager Md. Shoeb.
