This is a ceremony that hotels do not confine to their kitchen tables but celebrate along with their guests. People from all walks of life join in to mix the ingredients that goes into the cake served during Christmas. Luxury hotels have lined up traditional cake-mixing ceremonies to usher in the festive season. Cine actor Jyothirmayi lent a celebrity touch to the cake-mixing ritual held at the Taj Green Cove resort in Kovalam on Wednesday. An artCake mixing is an art by itself and the key to an absolutely delicious cake is in the way it is mixed and the variety of ingredients used. Apart from general manager Surinder Singh and Food and Beverages manager Devendra S. Ratnawat, other hotel staffs and in house guests participated in the event. Bakery chef Stanley, under the guidance of executive chefs led the audience through the paces of fruits, nuts and the art of mixing them. IngredientsThe ingredients included an array of fruit-raisins, glazed red cherries, orange peel, black currants, dates, dried apricots, figs, prunes, walnuts, cashew nuts, almond flakes, ground cardamom, cinnamon and cloves. Endless bottles of spirits and syrups like golden syrup, molasses, honey, and vanilla were poured into the mix while a number of gloved hands kneaded the concoction. Come December, this mix will be ready for baking and of course, eating. S. Anil Radhakrishnan
