For a healthier white wine

London: You may now raise your glass to a healthier white wine, for researchers have developed a way to boost its anti-oxidant content so that it has health benefits similar to red wine.

Red wine contains higher levels of antioxidants called polyphenols, which are said to lower cholesterol, protect heart and prevent cancer.

Polyphenols, found in the skins of grapes, are left on as the pulp ferments when making red wine but they are taken off for white.

A team at Technion-Israel Institute of Technology, Haifa, has found they could preserve the polyphenol content of white wine just by leaving the skins to ferment with the pulp for a relatively short time — about 18 hours — and by adding a limited amount of pure alcohol. — PTI
