Be wary of ‘Aflatoxins’ in your food

HYDERABAD: Aflatoxins, a potent carcinogenic produced by Aspergillus group of fungi and found in cereals, oilseeds and nuts, are turning out to be a major cause for cirrhosis of liver.

Researchers increasingly believe that exposure to aflatoxins, over a period of time, leads to chronic toxicity of the human body.

These harmful effects of aflatoxins, were brought out by Chief-Board of Studies, Department of Biochemistry, Osmania University Professor B. Sashidhar Rao in a lecture on ‘Food toxins and health hazards’ on the occasion of ‘Nutrition Week’ at Asian Institute of Gastroenterology (AIG) on Thursday,

Proper storage

“Aflatoxins are not destroyed by cooking. If proper care in storage is not taken, then all kinds of cereals, milk, eggs and even meat products get affected with aflatoxins. Liver is a major target organ of aflatoxins,” Dr. Rao said.
