X'mas pudding

How do you prepare Christmas pudding and when does one start the cake mixing?

THE PROCEDURE for Christmas pudding is the assembly of all the dry fruits and peels. You need to clean the dry fruits and cut them into smaller pieces. Chop the glazed cherries and the candied peels along with other nuts. Add sultanas, figs and dates along with dry ginger powder, cinnamon powder, clove powder, cardamom powder and mace. Add cake crumbs and mix it well. To a 1 kg mixture add 200 ml of rum or whisky or both combined. This should be marinated for about 1 to 2 months for the fruits to mature. To make the pudding take 700 gm of the marinated fruit mix, add 20 ml of caramel colour and 200 gm of refined flour. Add 2 eggs to this mixture and place it in a bowl over a double boiler in the oven. It takes about 4 hrs of cooking for the pudding to be ready.
