Red, red wine

The hallowed season of Xmas is a time to rejoice and celebrate. Uncork that special bottle of wine


TIPSY ON wine. If not, then try out these heady recipes that will add sparkle to Xmas.

Grape Wine

Ingredients:

Black grapes- 1 kg
Sugar- ¾ kg
Boiled and cooled water- 2 litres
Cloves- 4
Cinnamon- 1 (1 inch piece)
Yeast- 1 tsp
Sugar (for caramelising)- ½ cup

Method:

Wash the grapes well and keep it in a porcelain jar. Mash it with a wooden spoon; add sugar, cinnamon, cloves, water and frothed yeast. (For making the frothed yeast, you can mix the yeast with little sugar and lukewarm water and keep it closed for 10 minutes.) It must be 5 inches below the rim of the porcelain jar. Cover it with a cloth and place the lid above this. Stir everyday morning with a wooden spoon. After 21 days, strain it through a muslin cloth. Add the caramelised sugar and stir well. Keep it for another 21 days without disturbing. Bottle it in coloured bottles.

Gooseberry wine

Ingredients:

Gooseberries- 2 kg
Sugar- 2 kg
Water- 2 litres
Cloves- 3
Cinnamon- 1 tsp
Wheat grains- 1tsp
Yeast - 2tsp

Method:

Wash gooseberries, dry them with a cloth and keep it in a porcelain jar. Boil sugar with water and pour this into the jar. Add cinnamon, cloves and mashed wheat grains. After cooling add the frothed yeast. Stir with a wooden spoon and cover it. Stir on alternate days. After 21 days, strain it. Caramelised sugar may be added for colour.

Beetroot Wine

Ingredients:

Beetroot- 2 kg
Sugar- 3 kg
Water - 4 litres
Cinnamon- 3 pieces
Cloves - 2
Wheat grains- 2 tsp
Yeast- 2 tsp

Method:

Remove the skin and wash well. Cut it into small pieces. Cook it with 4 litres of water. After cooling, strain it. Pour this into a porcelain jar and add sugar, cinnamon, cloves, mashed wheat grains and frothed yeast. After 21 days, strain it through a muslin cloth and bottle it.

Banana Wine

Ingredients:

Bananas (Plantain)- 10
Sugar- 1 kg
Yeast- 1 tsp
Boiled and cooled water- 2 litres
Sugar for caramelising- ½ cup

Method:

Peel off bananas. Cut it into small round pieces. Add sugar, frothed yeast and water. After adding all the ingredients it must be 10 inches below the rim of the porcelain jar. Otherwise it will overflow. Stir it on alternate days. After 21 days, strain and bottle it. If you need colour you can add caramelised sugar.
