Walnut Chocolate Gateaux


Ingredients

Maida - 1 kg

Butter - 1 kg
Icing Sugar - 1/2 kg
Eggs - 23
Cocoa powder - 100 gms
Melted Chocolate (dark) - 100 gms
Chopped walnuts - 400 gms
Chocolate essence - 20 ml
Salt - 10 gms
Truffle cream chocolate - 1/2 kg
Fresh cream - 500 gms

Method

For truffle cream chocolate

1. Boil cream, add broken chocolate and whisk nicely. Strain and allow to cool.

For Gateaux

1. Beat eggs with sugar and icing sugar till stiff.

2. Add chocolate essence, melted chocolate, salt, flour and cocoa powder.

3. Add chopped walnuts and put in greased mould.

4. Bake at 160°C for 50 minutes. When cool, de-mould.

5. Slice cake base in two equal layers and apply truffle cream in between.

6. Cover the entire cake base with truffle cream and garnish with walnuts.
