SALT & PEPPER
SALT AND PEPPER changes the taste of food in the wok due to the sheer effect of heat. Here is how to make a proportionate salt and pepper mix.
Salt and pepper mixture
Ingredients
Black pepper corns- 3tbsp
Salt- 4tbsp
Method
Heat the wok/pan. Add peppercorns and roast, shaking constantly until the peppercorns gives off an aroma. Cool the peppercorns on a large plate until completely cold. Grind into a powder in a mortar or blender. Mix the powdered peppercorns with the salt.
This mixture can be stored in a tightly sealed container and can be used for all meats, poultry, seafood and vegetarian dishes.
Salt and pepper prawns
Ingredients
Prawns (cleaned)- 8
Onion (chopped)- 50gm
Ginger (chopped)- 5gm
Garlic (chopped)- 5gm
Celery (chopped) -5gm
Spring onions (chopped)- 20gm
Salt and pepper- a pinch
Corn flour as required
Ajinomoto -a pinch
Refined oil- 500ml
Method
Mix the cleaned prawns with little ginger, garlic and corn flour. Heat the oil in the wok. Fry marinated prawns on medium hot oil till golden in colour. Strain and keep aside. Heat wok/kadai; add a little oil, spring onions, ginger, garlic, celery, and onions. Stir-fry for a minute.
Add fried prawns, a little of salt and pepper mixture, ajinomoto, and stir-fry for another ½ a minute. Garnish with chopped spring onions.
Salt and pepper vegetables
Ingredients
Cauliflower (cut in small pieces)- 30gm
Baby corn (cut in cubes)- 30gm
Button mushroom (cut in half.) -30gm
Carrots (slices)- 30gm
Beans (cut in small bits)- 30gm
Onion chopped- 25gm
Ginger chopped- 3gm
Garlic chopped- 3gm
Celery chopped- 5gm
Ajinomoto- a pinch
Salt & pepper -a pinch
Corn flour as required
Refined oil- 500ml
Spring onion chopped -25gm
Water as required
Method
Dust the cauliflower, baby corn, mushroom, carrots, and beans with corn flour and sprinkle a little water to create a coating on top of the vegetables. Mix a little fresh oil.
Heat oil in wok; fry the dusted vegetables till crisp, strain the oil, and keep aside.
Heat the wok, add little oil, spring onion, ginger, garlic, celery, onion, stir-fry on high fire.
Add the fried vegetables, salt and pepper, ajinomoto and stir-fry for one minute.
Serve hot garnished with spring onions.
Salt and pepper spinach
Ingredients
Spinach, (cleaned) -200gm
Ginger, chopped- 5gm
Garlic, chopped- 5gm
Red chilli fresh, chopped 5gm
Spring onions- 5gm
Salt & pepper- a pinch
Sugar- a pinch
Ajinomoto- a pinch
Cornflour- 50gm
Refined oil- 500ml
Method
Clean, wash and cut the spinach into smaller pieces; mix with corn flour and sprinkle with little water, cornflour should create a coating on spinach. Sprinkle a little fresh oil.
Heat oil; fry the spinach till crisp on medium hot oil.
Heat the wok and add few drops of oil; add ginger, garlic, red chilli and fry for 2 minutes. Add fried spinach, salt& pepper, ajinomoto and sugar. Toss once. Serve with spring onions.
Fish, squid, prawns, chicken, lamb and vegetables (broccoli, zucchini, asparagus, bean sprouts, potatoes, spinach, bean curd, etc) can be made as salt and peppers. It is necessary that you cut all the vegetables into different shapes and sizes and the same applies to meat, poultry and seafood.A variety of salt & peppers can be made with Chinese five-spice powder, sesame powder, etc. Five-spice powder consists of equal quantity of finely ground star anise, fennel (saunf) seeds, cinnamon, cloves and Sichuan pepper.
