Try out these lip-smacking varieties of sandwiches
|
SANDWICH CAN be an ideal breakfast or snack provided it is given an exotic touch with slight variations in ingredients.
Instead of being just a mix of bread, butter, tomatoes, onions and chillies, it can be made an interesting dish that one could indulge in as heartily as perennial favourites, dosa, poori or idli-sambar.
Cheese exotica
Ingredients
Brown bread slices - 8 nos.
Onions (finely chopped) - 30 gm
Tomatoes (finely chopped) - 30 gm
Fresh coriander (finely chopped)
- 10 gm
Peppercorn powder (crushed)
- 10 gm
Green chilli (finely chopped) - 5 gm
Salt - 10 gm
Cheese (grated) - 40 gm
Butter - 10 gm
Baking powder - 1 tsp
Method: Toast the brown bread. Mix together all the above ingredients. Apply butter, and last, put grated cheese on top.
Grill the bread in the salamander till cheese gratinates and melts.
Remove. Cut into desired shape. Serve crisp and hot.
Sandwich trio
Ingredients
Bread slices - 4 white, 4 brown
Carrot puree (blanched, peeled)
- 20 gm
Cottage cheese (grated) - 100 gm
Yoghurt (hung) - 50 ml
Cream - 30 ml
Salt - 10 gm
Peppercorn powder (crushed)
- 15 gm
Thick mint coriander chutney
- 20 gm
Method: Make a smooth mixture of grated cottage cheese, hung yoghurt, cream, salt and crushed peppercorns and divide into three equal parts.
With one part of cheese mixture, add carrot puree and mix. Keep aside. With the second cheese mixture part, add mint-coriander chutney and mix. Keep aside.
Let the third part remain plain. Now, in an alternate layer, arrange all the different layers covering with the bread slice cut in half, and serve.
Sandwich al hammadi
Ingredients
Sandwich slices - 6 nos.
Butter spread - 10 gm
First filling - Hummus
Ingredients
Chickpea (boiled and mashed)
- 60 gm
Garlic (crushed) - 10 gm
Lemon juice - 10 ml
Olive oil - 10 ml
Paprika powder - 5 gm
Salt - 10 gm
Peppercorn (crushed) - 10 gm
Cumin powder - 05 gm
Tahina paste - 30 ml
(Sesame paste + hung yoghurt +
garlic + crushed peppercorn + salt +
olive oil)
Second filling - Tabouleh
Ingredients
Broken wheat (soaked in water and
squeezed) - 30 gm
Parsley (chopped) - 60 gm
Fresh mint (chopped) - 10 gm
Onions (chopped) - 25 gm
Tomatoes (chopped) - 25 gm
Lemon juice - 10 ml
Olive oil - 10 ml
Cumin powder - 5 gm
Method: Toast the bread slices. Take two slices, apply butter spread, mix together all the ingredients of the first filling and apply on top of two slices. Cover the filling with another toast. Apply butter spread on top. Mix together second filling ingredients. Apply on top of both the bread slices. Apply butter spread on the third slice, cover it. Slightly press and cut into four pieces.
Grilled sandwich - cheese,
tomato and chilli
Ingredients
Sandwich bread slices - 4 nos.
Tomatoes (sliced) - 3 nos.
Cheese (grated) - 60 gm
Bajji chillies (chopped) - 4 nos.
Salt - to taste
Pepper powder - 5 gm
Butter spread - 10 gm
Method: Heat sandwich griller. Arrange two bread slices, apply butter spread. Put grated cheese on top of chopped bajji chillies. Sprinkle salt and pepper powder, cover on top with sliced tomatoes. Cover with bread slice. Put it in griller. When the sandwich becomes crisp and golden in colour, remove. Cut into four pieces. Serve hot.
