On a TOMATO trail

Tangy tomatoes can be prepared in many different ways


TOMATOES ADD a twist to the recipe they are used in.

Tomato chicken

Ingredients:

Boneless chicken-500 gm
Green chillies-8
Green capsicum-1
Red chilli sauce-2 tbsp
Vinegar-2 tbsp
Vegetable oil-2 tbsp
Soya sauce-1 tsp
Salt-¾ tsp
Ajinomoto-½ tsp
Onion-1

Method:

Peel onion and cut into 4 pieces. Separate the layers from each piece. Cut capsicum into eight triangular pieces. Split green chillies lengthwise into two. Heat oil in a deep frying pan. Put in chicken pieces and fry. When the chicken is well browned after frying, add green chillies. Fry some more, then add chilli sauce, vinegar, tomato puree, soya sauce, salt, black pepper, ajinomoto and cook. When sauce thickens add green capsicum and onion, and serve.

Tomato bahar

Ingredients:

Tomatoes-500 gm
Onions-30 gm
Ginger-10 gm
Pepper powder- ½ tsp
Salt to taste
Water-1½ litres
Mint leaves-1 sprig
Sugar-1 tbsp

Method:

Chop the tomatoes, onions and ginger. Put them in a pan. Add salt, sugar, black pepper powder and a sprig of mint. Add water and bring to boil. Then allow it to simmer until the tomatoes are well cooked. Remove the sprig of mint. Mix in a blender and strain through a fine sieve. Serve chilled in a glass, garnished with a lemon slice and a sprig of fresh mint.

Tomato Shorba

Ingredients:

Tomatoes-500gm
Onion-30 gm
Ginger-10 gm
Garlic-2 cloves
Peppercorns-6
Cloves-2
A small piece of cinnamon
Mint leaves-1 sprig
Bay leaf-1
Sugar-1 tsp
A bunch of coriander leaves

Method:

Chop the onions and tomatoes. Put all the ingredients in a pan except lemon and coriander leaves. Bring to boil after adding1½ litres of water. Allow to simmer for about 45 minutes. Pass through a fine strainer. Check for seasoning. Reheat and add lemon juice. Serve hot, garnished with fresh coriander leaves.

Tomato prawn curry

Ingredients:

Tomatoes-15- 20
Dried prawns- 1 cup, chopped
Onions, sliced -4
Garlic, sliced-1 pod
Turmeric powder- ½ tsp
Salt- ½ tsp
Oil- 3 tbsp
Water- 4 tbsp

Method:

Cut each tomato in quarters. Add prawns, onions, garlic, turmeric powder and salt to the tomatoes. Pour oil and water over the ingredients in the saucepan. Cook till the water is absorbed. Serve with plain rice.

Tomato Saar

Ingredients:

Tomatoes-800 gm
Coconut milk-300 ml
Rice powder-1 tbsp
Oil-30 ml
Cumin seeds-1 tsp
Green chilly-10 gm
Red chilli powder-½ tsp
A pinch of salt
Black pepper powder- 1 tsp
Salt to taste
Green coriander leaves- 1 bunch

Method:

Blanch the tomatoes. Chop and cook for about for 10 minutes. Mix in a blender to a smooth consistency. Mix a little coconut milk with rice flour to make a smooth paste. Add the remaining coconut milk and mix well. Add it to the tomatoes. Heat oil in a pan. Add masala powder and ¼ cup of water and cook. Add tomato juice and bring to a boil. Add fish pieces and cook. When fish is done and the gravy has thickened, decorate with cream and chopped coriander leaves. Serve with rice.
