Coffee, cake and me

Here are some interesting recipes of a variety of coffee cakes for you to try out

COFFEE FREAKS now have ways of enjoying its taste other than taking it as a drink. Put your instant coffee powder to good use in these lip-smacking recipes for cakes:

Cinnamon coffee cake

Ingredients

Sugar: 200 gm
Butter: 125 gm
Egg: 1
Milk: 125 ml
Flour: 200 gm
Baking powder: 5 gm
Salt: 5 gm
Topping
Brown sugar: 50 gm
Cinnamon powder: 10 gm

Method

Heat the oven to 375 deg F and grease and flour the cake pan. Cream butter, add sugar and egg. Mix well, stir in milk. Sift together flour, baking powder and salt. Fold into the mixture. Blend well. Transfer it into the cake pan. Sprinkle with topping. Bake for 30 to 35 minutes.


Poppy seed coffee cake

Ingredients

Margarine: 150 gm

Butter: 150 gm
Sugar: 200 gm
Eggs (separated): 4
Flour: 200 gm
Baking soda/baking powder: 5 gm
Vanilla essence: 3 drops
Poppy seeds: 60 gm
Buttermilk: 60 ml
Topping
Sugar: 60 gm
Cocoa powder: 2 tsp
Cinnamon powder: 1 tsp

Method

Soak poppy seeds in buttermilk for 15 minutes. Cream margarine, butter, sugar and egg yolks, and beat well. Add dry ingredients and poppy seed mixture and vanilla essence. Beat egg whites stiff and fold into the mixture. Add topping ingredients. Bake at 350 deg F for 50 minutes.

Peach coffee cake

Ingredients
Sugar: 200 gm
Butter: 150 gm
Eggs: 2
Sour cream: 30 ml
Flour: 60 gm
Baking powder: 5 gm
Blanched peaches (chopped): 60 gm
Vanilla essence: 2 drops
Salt: 5 gm

Method

Cream sugar and butter until light and fluffy. Add eggs, sour cream and vanilla essence. Sift flour and baking powder together and add to the mixture. Fold in chopped peaches. Transfer to a pan, bake at 325 deg F for 40 minutes.

Apple cheddar coffee cake

Flour: 200 gm
Baking powder: 5 gm
Salt: 5 gm
Butter: 60 gm
Sugar: 60 gm
Egg: 1
Vanilla essence: 2 drops
Milk: 30 ml
Cheddar cheese (grated): 60 gm
Apples (sliced): 1

Topping

Flour: 2 tbsp
Brown sugar: 30 gm
Cinnamon powder: 5 gm
Butter: 2 tbsp

Method

Preheat oven to 375 deg F. Sift flour, baking powder and salt. Cream butter and vanilla essence, and blend well. Turn half the batter into a pan. Add in layers, half the cheese, half the apples, then remaining cheese, butter and end with apples.

Make crumbs of topping and sprinkle over apples. Bake 30 for minutes. Serve warm.
