Fat removal

How can one eliminate excess oil/ghee from gravies?

TRY OUT the following:

* Use less oil while cooking.

* Strain out excess oil after you have browned the onions and before you add the masalas.

* Remove all excess ghee after cooking by leaving the product away from heat so that all the oil comes on top which can then be removed with a spoon.

* Keep the cooked product in the fridge and let the ghee set on top (in case you are using ghee) The set ghee can then be just lifted off.

* Oil after frying can be removed by rolling the product in a brown paper or tissue so that it soaks all the extra oil.
