Hot jalebis

How does one make hot Jalebi and imruthis?

THE INGREDIENTS required for jalebi are refined flour - 500 gms, whey - 500 gms, cooking soda - 5 gms, saffron 1\2 gms, sugar - 500 gms, dalda/ghee - 1 kg. Method: Mix maida in whey adding a little water. Cover the batter with lid and leave it for fermentation for a day. Make sugar syrup by adding 1\2 litre water and 1\2 kg sugar and boil it till one thread consistency. Heat ghee and using a jalebi mould pour mixed batter in hot ghee. Put fried Jalebi in the hot sugar syrup, and serve hot.

The ingredients for imruthis are urad dal - 500 gms, sugar syrup, orange colour, ghee - 500 gms. Method: Soak dal two hours ahead and wash properly. Grind it smoothly for at least 30 minutes and add colour in the mixture to give the batter orange colour. Heat ghee and pour the batter with the help of a mould and fry. Remove the imruthis and dip in syrup and serve hot.
