Pickle pointers

I would like to know the precautions that have to be taken during the preparation of mixed vegetable pickle.

THE PRECAUTIONS to be taken while preparing mixed vegetable pickle are as follows:

All the vegetables should be uniformly cut, washed and dried thoroughly by either deep frying in hot oil or through sun or oven drying to remove all the moisture. The mustard oil to be used should be smoked and cooled to room temperature before the masala mixing is done. Ingredients for masala are chilli powder, coriander powder, methi powder, turmeric powder, whole ajwain, whole methi, mustard seeds, fried ginger garlic slices and salt. Add this masala to the mixed vegetables and store in a china clay earthen pot with wide mouth (tied with a muslin cloth) for two days and later in a sealed airtight container for it to mature and develop the taste.
