JUST A few recipes that will change your dinner in to a party menu.
Keema Pilau
Ingredients
500gm Lean Meat, minced
500gm Basmati rice
250gm Ghee
1 medium onion, finely sliced
2 teaspoons coriander powder
1 teaspoon ginger paste
1 teaspoon chilly Powder
2 tablespoons of curd
8 cloves, 1 stick cinnamon, a pinch of saffron
Sauté onion in ghee till golden in colour. Add mincemeat, ginger, coriander and chilly. When mince turns brown add curd and fry till mince turns rich brown. Add saffron.
Combine rice, cloves and cinnamon in a large pan and add water till it is about 6 cms above the rice. Bring to a boil. Let it simmer till rice is nearly cooked and water evaporates.
In a heat proof dish lay rice and mince alternately with the final topping being rice. Bake is an oven till rice is cooked.
Mix carefully so as not to break the rice grains. Serves eight.
Dates Chutney
Ingredients
6 dates seeded
1 small onion chopped
6 cloves of garlic chopped
½ teaspoon ginger paste
½ teaspoon chilli powder
½ teaspoon powdered cumin seed
2 tablespoons vinegar
Take all ingredients and blend in a flood processor till the paste is smooth and granule free.
Stuffed Banana Thrillers
Ingredients
1 cups of plain flour, finely sifted 1 egg, beaten
½ cup milk
4 bananas halved lengthwise and centre seeds scooped out
250ml of oil.
½ cup desiccated coconut
2 tablespoons of ghee
4 tablespoons of sugar
Mix desiccated coconut and sugar. Fry till golden brown with ghee. Allow it to cool.
Fill scooped out part of bananas with the fried sweetened coconut.
Mix batter of flour, beaten egg and milk. Bring both halves of banana together by driving a toothpick at top and bottom. Dip the banana in the batter and deep fry in oil till batter turns golden yellow. Take out the toothpicks. Serve at room temperature.
