Mexican cabbage relish


Ingredients

Cabbage (chopped) - 200 gms
Capsicum (chopped) - 500 gms
Pimento - chopped (1/4") - 20 gms
Chopped onion - 50 gms
Chopped parsley - 3 sprigs
Cider vinegar - 2 tsp
Sugar - a pinch
Pepper - as per taste

Method

1.Wash and drain all ve getables except pimento, combine them.

2. Combine vinegar, sugar, salt and pepper. Add pimento.

3. Add vinegar dressing to mixed vegetables toss.

4. Refrigerate and serve.
