A healthy platter

Salads are a good way to start your day


ONE FINDS people lining up at the salad bar of a buffet more often now. Salads are being reinvented and savoured with relish. However, their preparation needn't be a lavish affair always. Simple and easy-to-get ingredients are good enough to make your salad platter healthy, appetising and attractive.

MINTY POTATO DELIGHT

Ingredients

Small round baby potato — ½ kg
Thick curd — 2 cups
Finely chopped fresh mint
leaves — 3 tbsp
Mustard powder — 1 tsp
Chilli sauce — 2 tsp
Salt and pepper to taste

Method

Boil the baby potatoes. Peel and keep them aside. Hang the curd in a thin muslin cloth. Let excess water drain.

Add the chilli sauce, salt and pepper to the curd. Mix well. Add the potatoes.

Gently stir the potatoes in the curd mixture. Garnish with fresh mint leaves and serve chilled.

HEALTHY PROTEIN SALAD

Ingredients

Moong sprouts — 1 cup
Kabuli channa — 1 cup
Rajma — 1 cup
Paneer (cut into cubes)
— ½ cup
Capsicum — 1
Tomato — 1
Onion — 1
Cucumber — 1
Oil — 1 tsp
Chat masala — 2 tsp
Black salt — ½ tsp
Roasted jeera powder — 1 tsp
Limejuice — 2 tsp
Chopped coriander — 2 tbsp
Salt and pepper to taste

Method

Soak the rajma and kabuli channa overnight. Pressure-cook them until tender. Drain water and keep them aside. Cut the vegetables into small pieces. Heat the oil. Add the sprouts, rajma, kabuli channa and the vegetables. Add the remaining ingredients and mix well. Serve garnished with chopped coriander.

ANAR AND MOONG DAL

SALAD

Ingredients

Moong sprouts — 2 cups
Fresh red pomegranate
— 1 cup
Cucumber, chopped — 1 cup
Carrot, chopped — ½ cup
Cabbage, chopped — ½ cup
Curd — 1 cup
Salt and pepper to taste

Method

Beat the curd until smooth. Add salt and pepper. Mix well and chill it. Add the moong sprouts, anar (pomegranate), cucumber, carrot and cabbage to the curd mixture.

Mix well and serve chilled.

FRUIT AND VEGETABLE

SALAD

Ingredients

Apple, chopped — 1 cup
Pineapple, chopped — 1 cup
Fresh pomegranate — 1 cup
Paneer cubes — ½ cup
Cucumber, chopped — 1 cup
Capsicum, chopped — ½ cup
Tomato, chopped — ½ cup
For dressing
Honey — 6 tsp
Limejuice — 2 tsp
Salt and pepper to taste

Method

Cut the vegetables and fruits into medium size pieces. Add the paneer and chill.

Mix the honey, limejuice, salt and pepper. Shake well. Pour the dressing over the fruits and vegetables.

Mix well and serve chilled.
