Start with salads

Check out on these low- calorie salads


ONE FINDS people lining up at the salad bar of a buffet very often. Salads are being reinvented and savoured with relish these days. However, their preparation need not be a lavish affair always. Simple and easy to get ingredients are good enough to make your salad platter healthy, appetising and attractive.

Healthy protein salad

Ingredients
Moong or moth sprouts - 1 cup
Kabuli chana - 1 cup
Rajma - 1 cup
Paneer (cut into cubes) - cup
Capsicum - 1
Tomato - 1
Onion - 1
Cucumber - 1
Oil - 1 tsp
Chat masala - 2 tsp
Black salt - tsp
Roasted jeera powder - 1 tsp
Lime juice - 2 tsp
Chopped coriander - 2 tbsp
Salt and pepper to taste

Method

Soak the rajma and kabuli chana overnight. Pressure cook them until tender. Drain water and keep it aside. Cut the vegetables into small pieces. Heat the oil. Add the sprouts, rajma, kabuli chana and the vegetables. Add the remaining ingredients and mix well. Serve garnished with chopped coriander.

Minty potato delight

Ingredients

Small round baby potato - kg
Thick curd - 2 cups
Fresh mint
leaves (finely chopped) - 3 tbsp
Mustard powder - 1 tsp
Chilli sauce - 2 tsp
Salt and pepper to taste.

Method

Boil the baby potatoes. Peel and keep them aside. Hang the curd in a thin muslin cloth. Let excess water drain. Add the chilli sauce, salt and pepper to the curd. Mix well. Put it to chill. Add the potatoes. Gently stir the potatoes in the curd mixture. Garnish with fresh mint leaves and serve chilled.

Anar and moong dal salad

Ingredients
Moong sprouts - 2 cups
Fresh red pomegranate - 1 cup
Cucumber (chopped)- 1 cup
Carrot (chopped)- cup
Cabbage (chopped) - cup
Curd - 1 cup
Salt and pepper to taste

Method

Beat the curd until smooth. Add salt and pepper. Mix well and chill it. Add the moong sprouts, pomegranate seeds, cucumber, carrot and cabbage to the curd mixture. Mix well and serve chilled.

Fruit and vegetable salad

Ingredients

Apple (chopped) - 1 cup
Pineapple (chopped) - 1 cup
Fresh pomegranate - 1 cup
Paneer cubes - cup
Cucumber (chopped) - 1 cup
Capsicum (chopped) - cup
Tomato (chopped) - cup
For dressing:
Honey - 6 tsp
Lime juice - 2 tsp
Salt and pepper to taste

Method

Cut the vegetables and fruits into medium-sized pieces. Add the paneer. Put them to chill. Mix the honey, lime juice, salt and pepper. Shake well. Pour the dressing over the fruits and vegetables. Mix well and serve chilled.
