Solitary splendour

Here are some easy to prepare `meals for one'



Eating alone need not be boring with these quick fix recipes

COOKING FOR just yourself is as soul sapping as eating alone. Help, however, is at hand with these easy-to-prepare dishes.

Pav bhaji

Ingredients
Potatoes (diced) - 50 gm
Beans (diced) - 30 gm
Carrots (diced) - 40 gm
Cabbage (diced) - 40 gm
Salt - to taste
Red chilly powder - to taste
Turmeric powder - ½ tsp
Tomato puree - 3 tbsp
Pav bhaji masala - 1 tbsp
Onions (chopped) - 2 tbsp
Butter - 2 tbsp

Method

Boil all the vegetables. In a pan sauté onion in butter, add all the vegetables and sauté for some time.

Add the rest of the ingredients and cook it for some time. Mash the vegetables while cooking and season.

Presentation

To be served hot accompanied by buttered hot pav and garnished with a dollop of butter and chopped coriander.

American chopsuey

Ingredients

Beans - 3
Carrot - 2
Cabbage - 50 gm
Onion - 1
Capsicum - 1
Cucumber - 10 gm
Tomato - 10 gm
Tomato sauce - 5 tbsp
Noodles (boiled) - 60 gm
Oil - for frying
Corn flour - 40 gm
Sugar - 20 gm
Salt - to taste
Vinegar - 2 tbsp

Method

Mix dry corn flour with the boiled noodles and deep-fry them till they are golden in colour and crisp. Arrange in a dish. Keep aside. Shred all the vegetables. Heat oil and sauté the vegetables and add tomato sauce and water. Add sugar and salt, and thicken it with corn flour and vinegar.

Pour this sauce over the noodles into a serving dish. Garnish with shredded spring onions.

Milky way burger

IngredientsBurger bun - 1Cottage cheese (grated) - 80 gm

Salt/pepper - to taste
Thyme - ¼ tsp
Butter - 1 tbsp
Lettuce leaf - 2Potato (mashed) - 20 gm
Tomato roundels - 2 Cucumber roundels - 2Bread crumbs - 2 tbsp
Oil - for frying

Method

Cut the burger bun into three slices. Spread butter on all the three slices. Heat the bun on a griddle. Make a smooth mixture of cottage cheese, potato, salt, pepper and thyme. Shape them into patties and crumb fry them.

Arrange a lettuce leaf on the lower base and then place the fried patties on it.

Then put the middle slice and arrange cucumber and tomato on it. Then cover it with the third slice.

Presentation:

To be served hot accompanied with French fries, cole slaw and pickled vegetables.

Spaghetti with pepperoni sauce

Ingredients
Red capsicum (juliennes) - 80 gm
Black olives (stoned) - 10
Capers - 1 tbsp
Olive oil - 50 ml
Salt - to taste
Spaghetti - 450 gm
Butter - 50 gm
Cheese - 100 gm
Milk - 1 tbsp

Method

Sauté red capsicum in olive oil till it becomes tender, adding chopped olives and capers half way through the cooking time. Add salt to taste and strain off the excess oil.

Boil the spaghetti in water and salt solution until it becomes just tender. Transfer the spaghetti to a serving dish and pour the sauce on top. Add the butter, cheese and milk and mix it thoroughly.

Presentation

To be served hot garnished with grated cheese.
