EVER HEARD of a low cal Christmas celebration? Sounds almost unbelievable? After all, Christmas is about goodies, plump raisins, rich flavours loaded with calories. And what is Christmas without the Christmas cake? Some of us have to watch our weight for health reasons or for looking good. Either way help is at hand. Maria Joseph makes low-cal goodies. Her much-in-demand Christmas fruit cake (Rs. 170) is low on fat as she uses margarine. Even her carrot and walnut cake (Rs. 180) and date and walnut cake (Rs. 170) are low fat. "I keep in mind not just the calories but also the nutrition aspect when I bake," she says. Oatmeal and raisin cookies (Rs. 160 per kg) are also quite popular.

Having completed her catering course, Maria worked in the Maldives and now for a year has been baking cakes, cookies and making homemade wine. Of course, not all her cakes are low cal; the whopper of a rich chocolate cake (Rs. 300) enriched with a nutty filling and a chocolate topping is utterly delicious.
