Fun with bread

"CHOP SOME lettuce, fry some eggs, add a few slices of tomatoes and cucumbers, and voila! you have a sandwich," says Abhijit Saha, Executive Chef, The Park, while preparing some absolutely delicious sandwiches at the Sandwich Festival being held at the Cha Bar.
The festival, which is on till January 2, will showcase a mind-boggling array of sandwiches right from the simple cucumber sandwich to the down right exotic ones form all corners of the world.
But why sandwiches? Didn't we all hate to carry sandwiches for lunch when we were in school?
"The best part about sandwiches is the absolute variety that exists. Any stuffing will do. But a good sandwich must be healthy, quick, easy to prepare, easy on the palate and stomach, and must double as both lunch and snack," says Abhijit.
And guess what, even burgers are sandwiches. There are three types of sandwiches open, closed and burger. All three types are available at the festival. The must-tries have to be the chilli chicken burger, tuna sandwich, tomato and basil bruschetta and the cucumber-yoghurt-mint sandwich.
The chilli chicken burger was made famous at the Monsoon Restaurant, The Park, Kolkata. It essentially contains chicken cooked spicy the Indian way stuck between two halves of a bun. It is quite substantial.
The tuna sandwich, meanwhile, is probably one of the most popular sandwiches around the world. It contains tuna flakes, butter, onion, capsicum and mayonnaise in whole-wheat bread.
The calorie conscious can bet on the tomato and basil bruschetta and the cucumber, yoghurt and mint sandwich .
The tomato and basil bruschetta is an open sandwich and Italian. The specialty of this sandwich is that it uses blanched tomatoes and olive oil to give it that special taste.
"Blanched tomatoes can be prepared by putting them in boiling water. After some time, put them in cold water. This doesn't cook the tomatoes but the skin peels off," says Abhijit.
"But the most important part of the sandwich remains the bread. It makes or breaks a restaurant. Bread is something embedded in European culture and we are only now seeing the varieties in the city's bakeries," says Abhijit.
