Chooza kebab


Ingredients

Broiler chicken (cut into 3" cubes) - 450 gms
Thick hung curd - 5 gms
Ginger garlic paste - 15 gms
Salt - to taste
Curry powder - 5 gms
Tomatoes (quartered) - 100 gms
Onion (quartered) - 100 gms
Capsicum (quartered) - 50 gms
Oil - 40 ml
For curry
Cumin seeds - 1 gm
Black cardamom - 2
Green cardamom - 2
Cinnamon - 2
Cloves - 2
Bay leaves - 2
Brown onion paste - 100 gms
Grated dry coconut - 25 gms
Turmeric powder - 5 gms
Red chilli powder - 1 tsp
Coriander powder - 1/2 tsp
Tomato puree - 50 gms
Chicken stock / water - 250 ml
Cream - 30 gms
Coriander leaves (chopped) - 4 sprigs

Method

1. For curry, heat oil. Add spices, ginger-garlic paste and other ingredients. Cook.

2. Introduce stock and allow the curry to thicken. Add cream and seasoning.

3. Mix all ingredients and marinate chicken in it for 20 minutes.

4. Skewer the marinated chicken, alternating with layers of tomato, onion and capsicum quarters and grill over a hot plate till completely cooked. Serve the kebab on a bed of cooked rice with gravy.
