* Sriram Ramanathan (rsriram20012001@yahoo.co.in) wanted the recipes for dal makhani and paneer butter masala with Tamil names for the ingredients.

Here are the recipes:

Paneer butter masala

Ingredients: one cup paneer, 1 cup curd (thayir), salt (uppu), 2 1/2 tsp butter (venna), oil to fry. Paste: one onion (vengayam), 2 tsp ginger and garlic paste (inji and punda), 3 red chillies (sawapu milagai), 5 tomatoes (takkali), one cup coriander leaves (kothamali), curry leaves (karuvepillai), 1 1/2 tsp coconut (thengai), 2 tsp poppy seeds (kasa kasa), 5 cloves (krambu) and cinnamon (pattai), 3 tsp coriander powder, 2 cardamoms (elakkai), one tsp red chilli powder (milagai podi).

Preparation: Take half the butter and add to the oil and heat them in a pan; add the ground masala to the pan. Add the paneer and the rest of the butter after the masala comes to a boil. Let it simmer for about 15 minutes. Add little water when needed. After it comes to a boil put coriander leaves and serve it hot with finely cut onions and lemon juice.

Dal Makhani

Ingredients: One cup whole urad dal (muzhu karuppu ulundu), one tbsp coriander powder, one tsp turmeric (manja podi), one tbsp red chilli powder, one chopped onion, one chopped tomato, one tsp chopped ginger, 50 gm butter, one tbsp heavy cream (kadyinde pal edu) and salt to taste.

Method: Cook dal in pressure cooker along with coriander powder, turmeric, red chilli powder, salt and water. Cook until it's done. In a pan melt butter on low heat. Add onion and fry until brown then add tomato and 1 tablespoon heavy cream and cook for 5 minutes. Add boiled dal in it. Mix thoroughly. Serve with roti or naan (bread). If you are not worried about calories and fat content, add butter when serving.
