Yellow pulao


Ingredients

Rice - 200 gms

Onion (medium) - 1
Oil - 30 ml
Salt - as required
Cardamom - 2 pods
Cloves - 2 crowns
Cinnamon - a small stick
Bay leaf - a piece
Turmeric powder - a tsp

Method

1. Wash and soak rice for

10 minutes

2. Slice the onion. Mix a

pinch of salt with the

sliced onions and keep

aside.

3. Heat oil in a pressure pan and add cardamom, cloves, cinnamon, bay leaf and rice. Sauté. Add turmeric powder and fry for a few seconds.

4. Introduce double the quantity water and cook for seven minutes.

5. Squeeze the sliced onions to remove moisture and fry till golden brown. Garnish with browned onions.

Note: To introduce variety in yellow pulao, you could mix in boiled peas, fried baby potatoes, button mushrooms and diced cooked chicken.
