Here are some recipes to liven up your lunch

Yam pulao
Ingredients
Rice - 200 gms
Diced yam - 150 gms
Ginger - a piece
Garlic - 10 gms
Onion (medium) - 3
Tomato (medium) - 3
Mint - half bunch
Coriander leaves - half bunch
Green chillies - 2
Curd - 1 tbsp
Oil - 50 ml
Salt - as required
Cardamom - 2 pods
Cloves - 2 crowns
Cinnamon - a small stick
Bay leaf - a piece
Method
1. Boil diced yam till half done in salted water.
Remove, cool and fry to golden brown. Keep aside.
2. Wash and soak rice for 10 minutes.

3. Grind green chillies, tomatoes, ginger, garlic, mint, coriander leaves and half the onion. Keep aside. Slice the remaining onion.
4. Drain rice and fry. Remove and set aside.
5. Heat the oil in a pressure pan. Add cardamom, bay leaf, cloves, cinnamon and sliced onion. Sauté for few minutes.
6. Add ground ingredients and sauté. Introduce curd and fried yam. Add double the quantity of water and boil.
7. Introduce sautéed rice. Cook for seven minutes. Serve hot.
Soya granules pulao
Ingredients
Rice - 200 gms
Soya granules - 100 gms
Ginger - a piece
Garlic- 10 gms
Onion (medium) - 2
Mint - half bunch
Coriander leaves - half bunch
Green chillies - 2
Curd - 1 tbsp
Oil - 30 ml
Salt - as required
Cardamom - 2 pods
Cloves - 2 crowns
Cinnamon - a small stick
Bay leaf - a piece
Method
1. Soak soya granules in hot water for 5 minutes. Remove and rinse in cold water 2 to 3 times. Squeeze and keep aside.
2. Follow the same method as yam rice from steps 2 to 5.
3. Add ground ingredients, curd and soya granules and sauté. Add double the quantity of water and boil.
4. Introduce the sautéed rice and cook for seven minutes. Serve hot.
Yellow pulao

Ingredients
Rice - 200 gms
Onion (medium) - 1
Oil - 30 ml
Salt - as required
Cardamom - 2 pods
Cloves - 2 crowns
Cinnamon - a small stick
Bay leaf - a piece
Turmeric powder - a tsp
Method
1. Wash and soak rice for
10 minutes
2. Slice the onion. Mix a pinch of salt with the sliced onions and keep aside.
3. Heat oil in a pressure pan and add cardamom, cloves, cinnamon, bay leaf and rice. Sauté. Add turmeric powder and fry for a few seconds.
4. Introduce double the quantity water and cook for seven minutes.
5. Squeeze the sliced onions to remove moisture and fry till golden brown. Garnish with browned onions.
Note: To introduce variety in yellow pulao, you could mix in boiled peas, fried baby potatoes, button mushrooms and diced cooked chicken.
