FISHY all the way

Fresh fish has a distinct flavour. Chilled fish is very different from frozen fish.


SEAFOOD HAS that capacity to draw you into it, just can't resist it eh? But there is fish and fish. Sometimes a very efficient system may not be that palatable- especially in the case of fresh fish. Gone are the days when the fish you got from the fisherwoman was fresh from the sea. The efficient systems ensure the fish is immediately chilled and frozen as soon as the trawler drags them in. You would think that is whole lot better than rotten fish. But the longer they remain in the freezer, fish inevitably loses its freshness and flavour.

Chilled

At the Seafood Grill, The Trident Hilton, Executive Chef Prajod Krishna assures you that seafood on display is chilled, not frozen. The Seafood Grill, which is open during the weekends, (Friday, Saturday and Sunday) has a variety of fish, depending on the catch brought to the wharves. Besides the familiar names like Pomfret, Tuna, Tiger Prawns, Scampi there is Croaker, Emperor, Perch etc...The Chef will take your orders and then proceed to clean your fish and grill it in front of you.

For the just right- feel for your palate all you need to do is choose the marination. And that is an interesting exercise because there is a lot to choose from. If you like the raw flavour of seafood then the Citrus Herb is the mildest on the menu card. There is the regular Kerala spices and a very turmeric full Thai spices, Black pepper crust, etc. But the classic is the Lemon Mustard. Mustard, black pepper and a dash of lime is perfect for a relaxed evening.


In the Indian style, Tandoori Scampi served with Spanish seafood rice Payela, is a perfect combination that straddles two continents. Squeeze the grilled orange slice on the Scampi to give it a sweet- sour thrill. But it is the Escabeche (ask for the Emperor) that truly is the best. The Emperor is slit sideways, stuffed with red and yellow bell peppers and then grilled.

With potatoes

The fish is served with mashed potatoes and orange butter sauce. It is not a bland white mound of mashed potatoes that stare at you but this one is amply mixed with sun -dried tomatoes. The potatoes, the orange butter sauce and the fish together make a wonderful mouthful. Needless to say a great evening too.
