Crispy, crunchy papaddoms

Papads can be served as snacks or as part of a delicious Indian meal.


PAPPADOMS ARE world famous as Indian cuisine goes international. Here are some well tried out recipes.

Urad dal papad

Ingredients

Urad dal 1 kg
Dry red chillies 100 gm
Salt to taste
Asafoetida a little, dissolved in water

Method

Powder urad dal. Grind red chillies, salt, a little water and some asafoetida dissolved in water to a fine paste. Keep aside 1/4 kg of urad dal flour and mix the remaining flour with the ground chilli masala. Knead it well to get a smooth, pliable dough. Take a little of this kneaded dough. Roll it in the dry flour and form into thin papads. Dry in hot sun for a day or two.

Rice pappads (appala)

Ingredients

Rice 500 gm
Salt to taste
Rice flour 1 tbsp

Clean the rice and soak it. Then grind it fine along with salt to taste to obtain thick dough as for dosas. Sprinkle a little dry rice flour over plantain leaves. Pour and thinly spread the ground dough over each of the leaves and steam for five minutes in a steamer. Immediately remove the steamed papads and arrange them on clean mats. Dry in hot sun for two days.

Sweet potato pappads

Ingredients

Sweet potato ½ kg
Salt to taste
Oil as required

Boil sweet potato, peel off the skin and grind it along with salt to taste. Apply oil on your palm and roll out for convenient sized balls of the dough. Spread polythene paper and put the balls on it.

Then press each of them with your palm and fingers to form thin papads. Dry them in the hot sun for two days or more. Finally remove them gently into a basket when they are sufficiently dry.

Plantain papads

Ingredients

Unripe plantain ½ kg
Salt and pepper to taste

Boil ordinary unripe plantain and remove the skin. Boil a little water in a separate vessel add a little salt and pepper powder to taste and simmer well. Grind the boiled plantain using the foresaid boiled pepper water, and then form into papads. Dry and store well.

Jackfruit papads

Ingredients

Jack fruit (raw) 1 kilo
Cumin seeds 1 ½ tsp
Sesame seed powder 2 tsp
Salt to taste
Pepper powder 1 ½ tsp

Wash, clean and steam jackfruit after removing its seeds. When steamed well then grind this without water. Add the rest of the ingredients and stir well. Make lime sized balls and press each of them like papads by smearing oil on your palms. Transfer them to a cotton cloth and dry in the sun.
