Go bananas

Raw or ripe or even overripe, bananas can be cooked in different ways.


BANANA, A versatile fruit can be eaten raw, baked or cooked into a number of sweet and savoury preparations. Not only the fruit, but the flower, stem, stalk and leaves of the banana plant can be used in cooking. It is available all the year round. Select the right type of banana for baking and cooking. For eating, the best variety is the brown flecked one. Bananas that are slightly green at the ends are best for cooking. Plain, long yellow ones, which are lightly over-ripe and squashy, are ideal for baking.

Banana bread

Ingredients

Sugar - 1cup
Well-beaten eggs - 2
Margarine - ½ cup
Ripe bananas, mashed - 2 cups
Lemon juice - ½ tsp
Flour - 2cups
Baking powder - 2 tsp
Salt - ½ tsp
Cashew nuts (chopped) - ½ cup

Method

Cream together the margarine and powdered sugar. Add eggs and beat well. Sift together the flour, baking powder and salt. Blend into the banana mixture. Stir in the nuts and pour into a greased pan. Bake in a moderate oven for fifteen minutes.

Banana split

Ingredients

Banana - 1 per person
Vanilla ice cream - 2 tbsp per person
Chopped nuts - 1tsp per person
Melba sauce
Raspberry puree - 1/8 litre
Red currant jelly - 4 tbsp
Sugar - 100 gm
Corn flour - 2 tsp
Cold water - 1 tbsp

Method

Mix together the fruit puree, jelly and sugar and heat till the mixture comes to a boil. Blend the corn flour with the water and stir in.

Cook till the mixture thickens and clears, stirring constantly with a wooden spoon. Strain and cool.

Spilt the bananas lengthwise. Top each with a helping of ice cream.

Cover with Melba sauce. Garnish with nuts.
