Just two minutes
The constant refrain of today's youngsters is `no time.' Most youngsters prefer to eat out to save themselves the trouble of cooking a meal. Here are some just-a-minute recipes for a healthy diet.
Carrot and Fruit Salad
Ingredients
Carrots grated - 4
Apple, peeled and chopped - 1
Lemon juice - 2 tbsp
Small orange, peeled and segmented - 1
Soft cheese - 25 gm
Single cream - 1 tbsp
Fresh parsley chopped - 1 tablespoon
Salt
White pepper
A pinch of paprika
Method
Combine the carrots and apples. Mix it with half of the lemon juice.
Remove all the white pith from the orange segments and add to the bowl.
Cover with cling film and chill for 30 minutes or longer. Beat together the cheese, cream and remaining lemon juice. Stir in the parsley, salt and white pepper to taste and the paprika. Divide the salad in four bowls. Spoon a little dressing over each and serve.
Paneer and Sprouted Moong Filling
Ingredients
Paneer or Tofu (cubed) - 250 gm
Tomato puree - 1 tbsp
Green chilli (chopped fine) - 2
Black salt
Pepper
Sprouted green moong (green moong should be soaked overnight and sprouted) - 100 gm
Method
Mix all the ingredients except sprouted moong and keep stirring over medium heat till almost dry. Heat ghee in a non-stick pan and lightly sauté the sprouts for five minutes. Mix with the other ingredients and use as filling for sandwiches.
Garlic Mushroom Filling
Ingredients
Sliced mushroom - 200 gm
Garlic paste - 1 tsp
Butter - 1/2 tsp
Salt
Pepper to taste
Method
Heat butter in a non-stick pan. Add garlic paste and fry till the raw smell goes. Add mushrooms and seasoning. Saute for five minutes and mix well. Can be used as filling.
Chicken and Apple Salad
Ingredients
Boiled potatoes (cubed or sliced) - 285 gm
Mayonnaise - 2 tbsp
Cooked chicken (diced) - 350 gm
Apples (cored and sliced) - 2
Dried mixed herbs - 1 tsp
Lemon juice - 2 tbsp
Salt
Pepper
Lettuce - 1 small
Pasta (optional )
Paprika
Method
Place the potatoes in a large mixing bowl. Add the mayonnaise and toss the potatoes gently to coat it with the mayonnaise. Add the chicken, apple slices, herbs, lemon juice, salt and freshly ground pepper to the potatoes and toss. Cover with cling film and refrigerate for 25 to 30 minutes.
To serve, line a shallow serving dish with lettuce leaves. Pile the chicken salad in the centre and sprinkle with paprika.
