The magic of good cooking is that unlikely ingredients can be blended together to create lip-smacking dishes. Here are a few dishes that use ingredients as uncommon as toddy, marrow and brains.
Batero (meat cooked in toddy)
Ingredients:
Chicken or mutton leg (cut into cubes) - 1.5 kg
Toddy - 1 litre
Salt to taste
Ghee - 30 ml
Ginger whole - 1
Garlic - 2 pods
Turmeric powder - 30 gm
Chilli powder - 30 gm
Cumin seeds - 15 gm
Black peppercorns - 10 gm
Method: Grind all the spices together into a smooth paste. Pierce the mutton or chicken cubes with a fork and rub the marinade into it. Leave to marinate for two hours. Heat oil in a pan and add the meat to it. Sear the meat from all sides and then lower heat and cook till brown. Add the toddy, cover and let simmer until meat is cooked. Check seasoning and serve hot with rotis.
Kharu dodhi (bottle gourd savoury)
Ingredients:
Marrow - 1 kg
Onions - 3
Ginger garlic paste - 30 gm
Turmeric powder - 10 gm
Chilli powder - 15 gm
Cumin powder - 10 gm
Salt to taste
Oil - 30 ml
Tomatoes - 3
Green chillies - 2
Method: Peel the marrow and cut into dices. Chop onions, green chillies and tomatoes. Heat oil in the pan, add onions and cook till brown. Add the ginger garlic paste and saute. Add the spices along with a little water. Add the tomatoes and cook. Add the gourd and mix well. Cover with water and cook until the gourd is done. Check for seasoning.
Papeta ne vatena ni sookhi tarkari (savoury potatoes with green peas)
Ingredients:
Medium-sized potatoes - 8
Green peas - 400 gm
Green chillies - 3
Tomatoes - 100 gm
Coriander leaves - 20 gm
Turmeric powder - 10 gm
Cumin seeds - 15 gm
Mustard seeds - 10 gm
Ghee - 30 ml
Salt to taste.
Method: Par boil potatoes in salted water and then skin and cut into dices. Boil the peas and put them immediately afterwards in cold water. Heat ghee in the pan and add mustard seeds. When they start spluttering, add green chillies, tomatoes, coriander and cumin seeds. Add salt and turmeric powder and mix well. Add the potatoes and peas and mix well. Cook until potatoes are done and peas are well-coated. Check seasoning.
Bheja no pooro (brain omelette)
Ingredients:
Eggs - 12
Brains (cleaned and chopped) - 2
Turmeric powder - 5 gm
Chilli powder - 1 tsp
Salt to taste
Butter - 200 gm
Onions - 2
Green chillies - 2
Coriander - 30 gm
Garlic - 4 cloves
Method: Chop all the vegetables. Break the eggs into a bowl and add all the ingredients except the butter. Heat butter in a pan and make six small omelettes and cook them till they are crisp and brown from both sides. Serve hot with toast, butter and jam.
