Delectable delicacies

Stun your friends with Goan delights

If you are a foodie, then you will know that Goan cuisine reflects the people's passion for life. Try your hand at the famous vindaloo and of course the guava cheese.

Chicken vindaloo

Ingredients
Chicken (cut into pieces) - 1
Chillies - 10
Mustard seeds - 1 tsp
Turmeric powder - 1 tsp
Cumin seeds - 1 tsp
Ginger - 1 piece
Clove - 8
Garlic - 8
Onions (large) - 2
Garam masala - tsp
Vinegar - 2 tbsp
Tamarind pulp - 1 tpsp
Salt to taste
Oil - 3 tbsp

Method: Make a paste of the chillies, cumin, mustard, garlic, ginger and onion. Add turmeric powder. Heat oil in deep pan, sauté one onion (chopped).

Add masala paste, stir-fry for one minute. Add chicken pieces and stir-fry for two minutes.

Add half-a-cup of water, ginger and salt to taste. Cook on medium heat till oil floats to the top. Serve hot with plain rice/ chapatti, naan or roti.

Aranhas

Ingredients

Coconut - 1
Sugar - 200 gms
Tissue paper cut into 3 or 4 inch squares

Method: Remove the kernel from the coconut. Cut into fine, long strips and keep in water for a while.

Drain out the water and keep aside.

Keep a pan on the fire with the sugar and little water, and the coconut strips.

Cook on slow fire stirring, till it thickens and begins to leave the sides of the pan, spread the strips equally on each paper square, which should be laid out in advance.

Spread the sweet strips quickly as they will harden in the pan.
