Kebabs, dumplings and pakoras

Here are some snacks that go well with a hot beverage



TASTY TIDBITS Perfect for a coffee break

If you are stuck indoors with nothing to cheer you up, particularly on a holiday, you can try out some of these recipes for snacks, which make an excellent accompaniment to a piping hot beverage.

Mixed vegetable kebabs

Ingredients:

Cabbage (grated) - 1 cup
Carrots (grated) - 1 cup
French beans (finely sliced) - 1 cup
Onions (finely sliced) - 2
Capsicums (finely sliced) - 2
Potatoes (boiled and grated) - 3
Paneer (grated) - 1 cup
Coriander (chopped) - 3 tbsp
Green chillies - 3-4
Oil - 2 tbsp
Salt to taste

For frying:

Gram flour (besan) - 1 cup
Red chilli powder - Half tsp
Salt to taste
Water to make a thick batter
Oil for frying

Method: Heat 2 tablespoons of oil. Stir-fry the onions for 3-4 minutes. Then add the green chillies, capsicum, French beans, cabbage and carrots. Allow it to cook on a low flame until the vegetables are done. Add the grated potatoes, paneer and chopped coriander to these vegetables. Add salt and knead well. Allow this mixture to cool. Make kebabs out of this mixture. Make a thick batter by mixing the gram flour, chilli powder, salt and enough water. Dip the kebabs in this batter and deep fry in hot oil. Serve hot with pudina chutney.

Paneer dumplings

Ingredients:

Paneer - 250 gm
Bread - 8-10 slices
Thick curds - Quarter cup
Green chillies (finely chopped) - 2-3
A piece of ginger (finely chopped)
Coriander (chopped) - 3 tbsp
Corn flour - 3 tbsp
Salt and pepper to taste
Oil for frying

Method: Remove the crust of the bread slices. Crumble it and add it to the curds. Grate the paneer and mix it with the bread and curd mixture. Add the chillies, ginger, coriander, corn flour, salt and pepper. Knead well. Make small round balls and deep fry in hot oil until golden brown. Serve hot.

Cheesy corn pakoras

Ingredients:

Cheese (grated) - 2 cups
Corn (grated) - 1 cup
Corn flour - 1 cup
Gram flour (besan) - 5 tbsp
Baking powder - 1 tsp
Chilli ginger paste - 1 tsp
Milk - 1 cup
Salt to taste
Oil for frying

Method: Mix the corn flour, gram flour, grated cheese, grated corn, baking powder and salt. Add the chilli-ginger paste. Knead the above mixture. Add milk to it so as to get a thick batter. Beat the batter well until light and fluffy. Make small pakoras and deep fry in hot oil. Serve hot with tomato ketchup. For variation you can add mixed vegetables also to this batter and make Cheesy vegetable pakoras.

You can also substitute baby corn instead of corn. Cut the baby corn into thin long pieces and dip it into the above batter to get Golden fried baby corn.
