Pudding and pie for the season

Try your hand at baking with these mouth-watering recipes



BAKED BONANZA They're simply delicious

Do you enjoy baked dishes but don't know how to make them? Here are some recipes:

Apple Strudel

Ingredients
Egg yolk - 1
Flour - 300 gm
Salt - 5 gm
Vegetable oil - 40 ml
Lukewarm water -130 ml
Vinegar - 10 ml
Apple filling
Green apple - 5
Cinnamon sugar - 20 gm
Sponge crumbs - 50 gm
Rum raisins - 40 gm
Melted butter for brushing - 250 gm

Method

Mix all the ingredients together to make a smooth dough. Shape into rounds. Soak in oil overnight. Do the same for the filling. Stretch the dough onto a cloth. Brush it with butter. Sprinkle the sugar and crumbs. Add the filling. Roll over the dough and brush with butter. Bake at 180 degree C.

Chilled Cheesecake

Ingredients

Cream cheese - 500 gm
(mascapone, ricotta, philadelphia)
Whipped cream - 500 gm
Gelatine - 30 gm
Fresh milk - 150 gm
Egg yolks - 4
Sugar - 250 gm
Vanilla essence - A drop
Limejuice - 5 ml
Digestive biscuits - 100 gm
Melted butter for base - 50 gm

Method

Make cream anglaise with the milk, sugar and egg yolks. Cook it over a hot water bath until thick and add in the gelatine. Cool and fold in the cheese and cream. Put it in the prepared moulds with the biscuit and set in the chiller. For the garnish, use any fresh fruit.

Baked Pudding

Ingredients
Sponge crumbs - 1,000 gm
Egg yolks - 10 nos.
Fresh milk - 650 ml
Sugar - 400 gm
Egg whites - 10
Nuts - 150 gm
Liqueur - 100 ml
Vanilla essence - 10 ml
Optional ingredients
Chocolate sauce - 300 gm
Vanilla sauce - 300 gm
Fruit sauce - 300 gm
Method

Crumb the sponge thoroughly. Mix in the yolks, milk and flavour.

Add liqueur and nuts. Make meringue of 400 gm sugar and 10 egg whites and fold in. Pour into prepared pan with butter and sugar. Bake at 180 degree C in water bath till done. Garnish as required.
