TEMPTING TREAT An assortment of cookies

Cookies or biscuits, as the British prefer to call them, are a treat for all ages. Have them as a teatime snack or while you are on the move. Cookies are made with simple ingredients. Try these recipes and you'll realise how easy it is to bake a batch of tempting cookies.

Chocolate cookies

Ingredients:

Maida, self-raising - 2 cups
Milk powder - half cup
Powdered sugar - 3 tbsp
Soda bi-carb - half tsp
White butter - 1 cup
Condensed milk - quarter cup
Dark chocolate - 150 gm

Method: Sieve the flour, powdered sugar, soda bi-carb and milk powder. Mix the butter and the condensed milk and beat well until light and fluffy. It should be of a smooth consistency. Melt the dark chocolate. Allow it to cool. Mix all the ingredients to make a dough. Make desired shapes. Preheat the oven. Bake in a moderate oven until crisp.

Dry fruit delight

Ingredients:

Maida - 2 cups (flour) Powdered sugar - half cup
White butter - one-and-a-half cup
Almonds, chopped - quarter cup
Cashewnuts, chopped - quarter cup
Pistachios, chopped - quarter cup
Baking powder - three-fourth tsp

Method: Sieve the flour and baking powder. Blend the sugar and butter until light and fluffy. Add it to the flour along with the chopped almonds, pistachios and cashewnuts.

Knead well to make a dough. Make desired shapes. Preheat the oven. Bake in a moderate oven until crisp.

Spicy cookies

Ingredients:

Flour/maida, self-raising - 1 cup
Green chillies - 3-4
Sugar - 1 tspBaking powder - three-quarter tsp
Ghee - half cup
Curd - 3-4 teaspoon Salt, to taste

Method: Mix the flour, salt, sugar and baking powder.

Add the ghee, curds and the chilli paste. Knead well to make a dough. Proceed and bake as above.

Kesar Elaichi cookies

Ingredients:

Flour, self-raising - one-and-a-half cup Milk powder - half cup
Soda bi-carb - quarter tsp
Powdered sugar - 2 tbsp
White butter - three-quarter cup
Condensed milk - quarter cup
Saffron strands (kesar) - half tspCardamom powder - half tsp

Method: Sieve the flour, milk powder, sugar and soda bi-carb. Mix the condensed milk and butter. Beat until light and fluffy. Soak the saffron strands in a little milk. Add it along with the cardamom powder to the butter mixture.

Add this to the dry sieved mix. Mix and knead well. Make desired shaped cookies out of the dough. Preheat and bake in a moderate oven until crisp.
