Treat your family to an exotic experience with some French fare



SIMPLE TO MAKE Spotted prawns with hot garlic sauce

Nothing like a healthy diet to keep you going through a hectic week. Broccoli, prawns and sprouts are not just nutritious but also tastyTry these easy to make recipes to get a taste of French Nouvelle cuisine.

Cream of broccoli soup

Ingredients

Broccoli: 400 gm
Carrot: 100 gm
Turnip: 30 gm
Onion: 30 gm
Refined flour: 30 gm
Butter: 30 gm
Milk: 300 ml
A pinch of pepper

Salt to taste

Method Clean the vegetables, roughly chop and allow them to boil. Once the vegetables are tender, cool and puree. Heat a heavy bottom pan. Add butter and melt on a slow flame. Add refined flour. Cook it for a minute. Add hot milk and cook till thick. The white sauce is ready. Add pureed vegetables to the white sauce, stirring it constantly. Pass the mixture through a sieve. Boil the sieved mixture; adjust seasoning. Serve hot and garnish with cream.

Spotted prawns with hot garlic sauce

Ingredients

Jumbo prawns: 4
Sesame seeds: 10 gm
Salt to taste
White pepper powder: 5 gm
Lemon juice: 1/2 tsp
Oil: 150 ml
Red chilli paste: 50 gm
Garlic, chopped: 20 gm

Method Remove prawn shell and de-vein. Wash and remove excess water. Marinate prawns with salt, pepper, lemon juice and sesame seeds. Leave aside for 15 minutes. Deep fry the marinated prawns and remove excess oil.

Heat some oil in a pan. Add chopped garlic and let it brown. Add this to the red chilli paste. Adjust seasoning. Serve prawns with hot garlic sauce.

Sprouts salad

Ingredients

Assorted sprouts: 200 gm
Salt to taste
Pepper powder: 10 gm
Lemon juice: 1 tbsp
Onion, chopped: 2 tbsp
Tomatoes, chopped: 1 tbsp
Celery, chopped: 1 tsp
Lettuce leaves: 3
Synthetic vinegar (optional): 1 tbsp

Method

Put all ingredients in a bowl and mix well. Serve garnished with lettuce leaves.
