In the pan

Is it possible to make crisp and tasty biscuits, in flavours like orange and pineapple, by using a pressure pan?

Yes, biscuits can be made using a pressure pan, but the pan should be free of moisture.

As an alternative, sand can be put on the bed and biscuit tray on top of that. The biscuits should be baked in the pressure pan for nearly 20 minutes.

Rare rennet

From where can I get rennet in Hyderabad? What is rennet called in Hindi? Is it sold in medical stores?

Rennet is not available in Hyderabad, I don't think there is a name for rennet in Hindi and it is not sold through medical stores here.

Baking time

What is the baking time for plum and sponge cakes? What is the procedure for icing?

The baking time for plum cake is 40 minutes at 180°c while for sponge cake, it is 8 minutes at 220°c. For icing, you will need one litre of cream (30 per cent fat) and 200 gm of grain sugar. Mix the ingredients and whisk for 10 minutes at high speed in a mixie. When the icing is ready, cut the sponge in required shapes. Three layers of this sponge are required to make a good cake. Icing needs to be applied between the layers with a sprinkle of single thread sugar syrup.

The cream should be chilled before whisking so that the stiffness is attained. Applying the icing comes with practice. So if you're a novice, take professional help.
