Treat yourself to delicious home-made kulfis

If summer is here, can kulfis be far behind? The bell announcing the arrival of the ice-cream man is one of the most pleasing sounds on lazy summer afternoons. Or you can try making them at home with these simple recipes.

Cardamom Kulfi

Ingredients

Cool whipped cream - two cups
Evaporated milk - one cup
Sweetened condensed milk - one cup
Cardamom powder - 1 tsp
Pista - four

Method

Whisk cream, evaporated milk and milk together for five minutes or blend them in a liquidiser for a few seconds. Add cardamom powder and pista pieces to it. Keep it in a freezer for eight to 10 hours.

Kesar Pista Kulfi

Ingredients

Evaporated milk - two cans
Condensed milk - one can
Whipped cream - 480 gm or two cups
Pista - quarter cup
Saffron - a pinch

Method

Take a pot and mix evaporated milk, condensed milk and whipped cream with an egg beater or blend in a liquidiser for a few seonds. Now mix pista and saffron in it Put into an air-tight container and put in the freezer for four hours. Serve with falooda.

Malai Kulfi

Ingredients

Milk - two litres

Sugar - two cups
Orange or apple juice - two tbsp
Cardamom - 10
Cashews (break into tiny pieces) - 15
Bread slice (soak in half a cup of milk) - 1s
Method

In a heavy bottom pan, heat the milk stirring continuously. Add orange/apple juice. Keep stirring and boil the milk on low heat till it is reduced to half. This will take about two hours. Mash the bread and add to the content and stir for five minutes. Turn the stove off and add ground cardamom and cashew. Let it cool for a while and pour into plastic tumblers and freeze them. Leave for eight to ten hours or till kulfi becomes solid.
