FOOD WISE Home-made food can have a lot of variations

Dal Patti

Ingredients
Moong dal: 1/2 cup
Chana dal, fried: 1 cup
Rice flour: 2 cups
Besan: 1/4 cup
Mumbai rava: 1 cup
Water: 1/2 litre
Oil: 1/2 litre
Ghee: 2 tsp
White sesame seeds: A fistful
Curry leaves
Salt to taste
Jeera powder: 2 tsp
Red chilli powder: 2 tsp

Method

Roast Mumbai rava. Boil water, add moong and fried chana dal and let it cook till the dal softens. Add jeera, salt, red chilli powder and mix well. Add fried rava, sesame seeds and curry leaves.

Heat a ladle of oil, add to dough and mix well. Heat oil for deep fry. Place a lemon-sized ball of the dough on a plastic cover.

Make a circular disc, add to heated oil and deep fry. Store in airtight container. The shelf life is about seven to 10 days.

(Serves five; Time required: 20 minutes)

Ingredients
Bread slices: 10
Maida: 4 tsp
Oil: 4 tsp
Hot and sweet sauce: 4 tsp
Water: Half cup
For the filling
Capsicums, finely chopped: 2
Paneer, grated: 250 gm
Cheese, grated: 1 cube
Carrot, grated: 1
Black pepper: Half tsp
Salt to taste

Method

Mix the chopped capsicum with the grated paneer, cheese and carrot. Add black pepper, salt and sauce. Mix well and set aside. Cut off the crusts of the bread and flatten each slice with a rolling pin. Mix the maida with water to obtain a thick paste, set aside. Place a tsp of the filling over a flattened slice, fold over and close the edges and seal with maida paste. Repeat for all slices.

Heat oil in a pan, dip the sealed bread slices and deep try until they turn golden in colour. Cut each into two pieces and serve hot with green chutney.

Spinach wheels

Ingredients

Spinach : 1 cup
Maida: 1 cup
Green gram dal: 1 cup
Poppy seeds: 2 tsp
Saunf: 2 tsp
Garam masala: 3 tsp
Sugar: Half cup
Butter: Half cup
Oil to fry
Salt to taste
Method

Make a dough with maida by adding butter, salt and water. Keep it aside for a while. Cook spinach and make it into a fine paste without water. Now take green gram dal and fry it in oil until it turns golden brown. Add poppy seeds, saunf, sugar, salt, garam masala, and grind to powder. To this add the spinach paste. Mix all the ingredients and keep aside. Now roll flat chapattis, smear butter and spread the grounded paste on it. Roll the chapatti tightly, cut off the edges. Cut them into small pieces. Repeat the same with the remaining dough. Deep fry. Spinach wheels are ready to eat.

Soya powder

(This can be used alongside idlis and dosas)

Ingredients

Soya granules/crunches: 1 cup

Jeera: 1 tbsp
Green chillies: 3
Dry red chillies: 3
Garlic, peeled: 1 pod
Salt to taste
Method

Grind soya granules. Add salt, jeera, green chillies, red chillies and the peeled garlic.

Grind with all the ingredients again till it becomes a fine powder. Store in an airtight container.
