Matarshutir kochori (Pea Puris)

Ingredients: Flour-250 gm, green peas (boiled and mashed)- 1/2 cup, salt-1 tsp, oil for deep-frying, oil-2 tsp, hing-1 pinch, ginger paste-1 tsp, jeera-1 pinch.

Method: Warm a little oil and add hing. Put in the mashed peas, salt, jeera and ginger paste. Fry a little and remove. Now knead the flour with salt, oil and water. Make 20 portions. Stuff these with the pea mixture. Roll out like puris and fry. They must puff up. Keep heat low. Tastes delicious with dry alu dum.

Raw Banana Rolls

Ingredients: Raw banana (boiled, peeled and ground) - 1 cup, corn flour - 1 tsp, palak and methi leaves (finely chopped)- 1/4 cup each, carrot (grated, optional)-2 tsp, green chillies (finely chopped)-3/4 tsps, onions (chopped)-1/2 cup, ginger (finely chopped)- 1/4 spoon, coriander (finely chopped)-1 tsp, curry leaves (chopped)- 1 tsp, salt to taste, oil for frying.

Method: Mix ground raw banana, corn flour, methi leaves, palak leaves, onions, green chillies, grated carrot, coriander, curry leaves and salt with out adding any water.

Now make small balls and flatten them like vadas and deep fry in hot oil until brown. Raw banana rolls are ready. Serve hot with sauce.
