To usher in the New Year, what better way greet it then with a mouth-watering spread.
Pineapple pachadi
Ingredients
Pineapple- half kg
Kismis (fried)- 100 gm
Green chillies-three
Salt-to taste
Curd- one cup
To grind: Coconut- two cups, red chilli powder-one tsp, mustard seed-quarter tsp
To fry: Oil-one tsp, mustard seed and fenugreek seeds-quarter tsp each, red chilli-one, dry red chilli-one
Method
Cut pineapple into cubes. Add salt, turmeric and enough water to cook. Add curd.
Grind the ingredients and add to the cooked items. Add the fried kismis. Fry fenugreek seeds, mustard seeds, etc and add the curry to this when the mustard splutters and boil.
Beetroot-bitter gourd thoran
Ingredients
Beetroot-half kg
Bitter gourd- half kg
Salt-to taste
Turmeric-half tsp
To grind coarsely- Grated coconut-two cups, red chilli powder- two tsp, jeera-half tsp, garlic- three pods, curry leaf- one sprig
To fry- Oil-one tbsp, dry red chilli- one, curry leaf-one sprig, mustard seeds and urad dal-quarter tsp
Method
Cut the vegetables into thin pieces. Add salt, turmeric and enough water to cook. Grind the ingredients and add to the cooked items.
Fry the items mentioned for frying and add the vegetables combined with the ground coconut. Stir till water dissolves. Serve with rice.
Yam errisery
Ingredients
Yam-half kg
Turmeric powder-half tsp
Drumsticks-four (cut into inch-long pieces)
Salt-to taste
To grind: Grated coconut-two cups, garlic-two pods, red chilli powder- two tsp, curry leaf-two sprigs
To fry: Oil-two tsp, red chilli-one, coconut- one tbsp, mustard seeds and urad dal-quarter tsp
Method
Boil yam, drumstick, and turmeric in just enough water. When yam is cooked add salt.
Grind the ingredients and add to the cooked vegetables. Heat oil in a pan add the ingredients for frying. When the mustard splutters pour the curry to this, boil.
Rice flake payasam (Aval)
Ingredients
Thinly pressed rice flakes- one cup
Milk- six cups
Broken raw rice- one and a half tbsp
Condensed milk-half tin
Sugar-half cup
Cardamom powder-half tsp
Ghee-to fry the rice flakes
Method
Fry the rice flakes in a little ghee. Take two cups of milk and bring to boil. Add the raw rice, close the pan with a lid and cook till the rice is soft. Pour the rest of the milk into the cooked rice along with condensed milk and sugar. Stir continuously till the quantity reduces to half. Add the cardamom powder. Just before serving sprinkle the rice flakes over the payasam.
