Pork special
Ingredients
Pork: 2 kgs
Onions, fried in 5 tablespoons oil and made into a paste: 5
Tomatoes, chopped and pureed: 7
Ginger and garlic paste: 3 tbsp
Dry red chillies, roasted and soaked in vinegar for half an hour and made into a paste: 10
Haldi powder: 2 tsp
Chilli powder: 4 tsp
Dhania powder: 2 tsp
Elachi, roasted and powdered: 10
Cloves, roasted and powdered: 8
Cinnamon, roasted and powdered: 3 inch piece
Jeera, roasted and powdered: 2 tsp
Shajeera: 2 tsp
Salt: As per taste
Water: 1 cup
Oil : 1/2 cup
Garnish:
Kothmir: 1 bundle (wash and chop)
Pudhina: 1/2 bundle (wash and chop)
Lime juice of one lime
Method: In a Kadai, pour 1/2 cup oil, add the haldi powder, chilli powder, dhania powder, then add the ginger garlic paste. Fry till brown. Add the chilli paste soaked in vinegar. Fry well. Add the onion paste, mix well then add the tomato puree, stir thoroughly and fry for about five minutes. Then add the 1/2 the quantity of the roasted and spice powder. Stir well. Then add the pork and the salt. Let it fry thoroughly for about 10 minutes and stir continuously. Transfer in a pressure cooker add the water and cook till done. Then add the remaining 1/2 quantity of the masal powder. Stir well and cook without the stopper for about five minutes on low flame. Garnish with kothmir, pudhina and lime juice. Serve with naan or kulchas, chappatis or rice.
