Hyderabadi chuger baingan
Ingredient
Chuger (fresh tender leaf of tamarind tree), washed and drained: 1/2 kg
Baingan (bringal) medium size, cut into 4 pieces, vertically and soaked in salt water: 1/2 kg
Onions, finely chopped: 1 kg
Green chillies, vertically cut: 2
Garlic and ginger paste: 2 tbsp
Chilli powder: 2 tbsp
Haldi powder: 1 tsp
Oil: 200 gms
Kothmir and pudina, chopped
Salt to taste
Preparation Fry onions in oil till they turn light brown, add garlic and ginger paste, fry till the smell comes. Add chilli, haldi powder, salt and fry for a minute. Then add chuger, cover the lid and cook. Stir it for 5 to 6 minutes adding litter water. Add baingan and cover the lid. Cook for 5 to 6 minutes not disturbing brinjal much, and leave it for 5 to 6 minutes on low flame and it is ready. Serve with Jawor ki roti or fine rice.
