Fruit fetish


What are the seasonal fruits of summer? Is it advisable to take these seasonal fruits of one season in another? Why are we advised not to take spices like pepper, garlic and red chillies during summer ?

a. Mango, papaya, watermelon, muskmelon are the fruits available in summer. It is definitely not advisable to preserve food for next season as it looses lot of nutrients, vitamins and taste.

b. Spices like pepper, garlic and red chillies are very strong and have a heating effect on the body. So it is advisable to have less of pepper garlic and red chillies in summers.


Crisp tips

When I make pakodi of any vegetable, it turns out to be soft and not crisp. What is to be added to make the pakodi crisp.

First thing while making pakoras is that batter has to be of right consistency. The vegetables used for making pakoras should not have too much water in it... like we cannot make a tomato pakora crisp because of the water content in the vegetable. Always fry twice. First fry it till half done on a medium gas flame and then make it crisp by frying on a high flame before serving.

For making a pakora crisp, rice flour or corn flour can be added to the batter.
