HEALTHY AND LIGHT Golden chicken salad
This salad is often made in summer and can be made in a jiffy. It is cooling and nutritious. The combination of chicken, apples, pineapple, lettuce, celery, walnut, and lemon juice makes this salad delicious and healthy. It is often served with butter rice. This rice is light and easy-to-make too.
Golden chicken salad
Serve 6
Time 15 minutes
Chicken - 300 gm, boneless
Apple (golden) - 3, peeled and cut in cubes
Pineapple - 1 small, cut in cubes
Lettuce - 8 leaves, shredded
Celery - 2 branches, cut fine
Walnut- 8 to 10
Lemon - juice of one
Olive oil - 2 tbsp
Pepper - 1 tsp
Salt
Cook chicken with some salt and half-a-cup water. Cool and cut into small pieces. In a big bowl, mix fruits, celery, lettuce leaves, walnut, lemon juice, olive oil and salt and toss. Refrigerate and serve cold with butter rice.
Butter rice
Serve 6
Time 15 minutes
Ponni rice (old harvest) - half kg
Butter - 100 gm
Salt
Cook rice and strain. In a big bowl, when the rice is still hot, add butter and salt. Toss and serve warm with golden chicken salad.
