Recipe of the week


Mustard chicken gravy

(Cooking time: 20 minutes
Serves: 4 persons
)
Ingredients:
Chicken: 1/2 kg
Red chillies: approx 5
Mustard seeds: 4 tsps
Cashew nuts: 50 gms
Garlic ginger paste: 3 tsps
Large onions, large finely chopped: 2
Coriander: 1 bunch
Mint: 1 bunch
Oil: 3 tbsp
Curds: 1 cup
Haldi: 1/2 tsps
Salt to taste

Method:

Fry mustard and red chillies in a teaspoon of oil, cool and grind it to a smooth paste. Fry cashew nuts in a tsp of oil, cool and grind it to a smooth paste. Mix this cashew paste with fresh curds.

Take a thick bottom pan and pour three tbsp of oil and fry finely chopped onions till golden brown.

Add garlic ginger paste and haldi and fry for a minute. Add chicken pieces and fry for five minutes.

Add mustard and red chilli paste, salt and fry. Add water to cook the chicken.

When chicken is cooked, add cashew nut and curd paste and simmer for 3-5 minutes.

Add chopped coriander and mint and simmer for two minutes.

Serve hot, garnished with onion rings and coriander with hot rice, chapathi or dosas.

Mulayam Karela

Ingredients

Karela (Bitter gourd) - 500 gm
Muster seed - one third of a cup
Yogurt - half cup
Green chillies - 4
Coriander, chopped - 1 tbsp
Turmeric powder - half tsp
Salt to taste
Refined oil

Method

Cut karela into small pieces, add salt and keep it aside. In a grinder put mustard seeds, yogurt and two green chillies. Make a smooth paste.

In a kadai heat oil and add karela. Cover and fry karela in medium heat, stirring occasionally. When the karela becomes tender, add the mustard paste and turmeric powder, mix well. Reduce heat to low, add one third cup water, cover and cook in low flame for another five to 10 minutes. Then garnish it with chopped coriander and two slit chillies. Serve with rice.
